Recipe Review-Pineapple Upside-Down Cake: A Blast From the Past Worth Every Bite

Image
Pineapple Upside-Down Cake: A Blast From the Past Worth Every Bite Some recipes do more than satisfy your sweet tooth. They take you straight back to your childhood kitchen. That is exactly what happened when I decided to make a Pineapple Upside-Down Cake. The moment it came out of the oven I was transported right back to my mom's kitchen, watching her pull one of these beauties out and flip it over to reveal that gorgeous, glossy pineapple topping. It was one of my favorite things she made, and now I remember why. A Little History Worth Knowing This cake has a surprisingly rich history. Long before it became an American classic, cooks in medieval Europe were already baking inverted skillet cakes, placing apples, plums, or cherries on the bottom of a cast-iron pan with butter and sugar, pouring batter on top, and flipping the whole thing over after baking to reveal a caramelized fruit topping. Pineapple itself was considered such a luxury fruit for centuries after Christopher Col...

Phantasma by Kaylie Smith: A Review Bringing a Book To Life

Image
Phantasma by Kaylie Smith: A Review and How I Brought It Into My World Rating: 3.5 out of 5 stars I picked up Phantasma by Kaylie Smith with high hopes. It had all the ingredients I love: an atmospheric setting in New Orleans, a young woman with inherited necromancy magic, a mysterious haunted mansion, and a forbidden romance with an otherworldly stranger. For the first two thirds of the book I was completely pulled in. The story follows Ophelia, the eldest Grimm daughter, who enters a deadly competition called Phantasma to save her younger sister. Inside she strikes a bargain with the enigmatic Blackwell, a charming and mysterious Phantom, and what follows is a dark fantasy world filled with monsters, trials, and a slow burn romance that had me turning pages. The atmosphere is where this book truly shines. Kaylie Smith creates a world that feels gothic, lush, and cinematic.  However I have to be honest. Around the two thirds mark the story started to feel repetitive for me...

Monthly Motivation-A Turn on the Trail.

Image
I recently watched the movie The Highwaymen , a gripping story about two lawmen tracking down Bonnie and Clyde. One line really caught my attention—it mentioned “one turn on the trail.” To me, this powerful phrase means that a single decision or change in direction can completely alter the course of our lives. The turns and decisions we make can be deliberate, spontaneous, or sometimes taken out of necessity. Sometimes, life forces a turn on us—like my own experience with an unwanted divorce. Other times, we consciously choose to change direction and take a new path. Every choice we make carries consequences—sometimes positive, sometimes challenging—and the impact ripples not only through our own lives but also affects those around us. Sometimes life forces us to take a turn we never wanted, a sudden illness, job loss, the death of a loved one, or a divorce, to name a few examples. While we may not have control over these changes, we do have the power to accept them and le...

Restaurant Review-A Birthday Dinner Worth Writing About: Nomad's, Hillsborough NC

Image
Some restaurants are just a meal. And then there are the ones that become a memory. Nomad in Hillsborough, NC is the second kind. I took my daughter out for her birthday dinner and from the moment we walked in I knew we had chosen the right place. The Atmosphere- Nomad is housed in a refurbished older building and it wears its history beautifully. Exposed brick walls, a warm rustic interior, and a cozy charm that wraps around you the moment you step inside. The space is intimate without feeling cramped, and the atmosphere strikes that perfect balance between special occasion and completely comfortable. It felt like exactly the kind of place you want to be on a birthday. We chose to sit at the bar, which turned out to be a wonderful decision. The Service- Our bartender was an absolute joy. Friendly, knowledgeable, and genuinely attentive without ever hovering or making us feel rushed. He paid attention to us in all the right ways, making sure we felt welcomed and taken care of thro...

Need Stress Relief? Try Spending Time Near the Water

Image
Need Stress Relief? Try Spending Time Near the Water Let’s continue on with our series on stress relief and self-care. Today, let’s explore one of nature’s most powerful stress relievers — something that has been right in front of us all along. Whether it’s the ocean, a lake, or a gently flowing river, being near water has a way of making everything feel a little more manageable. Have you ever noticed how your shoulders seem to drop the moment you step near the water? There’s a reason for that, and it turns out science backs it up beautifully. What Is “Blue Space” and Why Does It Matter? Researchers have coined the term blue space to describe any environment that features a body of water — oceans, lakes, rivers, canals, and even urban fountains. And just like green space (parks, forests, and gardens), blue space has been shown to have real, measurable benefits for our mental health and well-being. According to blue space research published across multiple studies, spending just...

When Bears Come to Visit: Our Wild Gatlinburg Experience

Image
When Bears Come to Visit: Our Wild Gatlinburg Experience We had heard the stories. "You might see a bear or two." What we did not expect was to have our own little bear neighborhood right outside our rental home in Gatlinburg, Tennessee. What followed was one of the most unforgettable family vacations we have ever had, complete with named bears, a hot tub standoff, and one very personal lesson I will never forget. Meet the Locals From the moment we settled in, it became clear we were not the only ones with a claim to the property. We quickly identified six recurring "guests." Sarah was our most frequent visitor, a confident and clearly experienced bear who had figured out that vacation rentals come with perks. How do we know? Because Sarah got into our car and helped herself to a bag of pistachios. She then strolled just inside the tree line beside the driveway and enjoyed every last one of them like she had earned it.  Pistachio was the adolescent bear that trave...

One Inspirational Quote by Mark Twain That Is Worth Living By

Image
“The best way to cheer yourself up is to try to cheer somebody else up.” Mark Twain Mark Twain had a gift for saying in one sentence what most of us need a whole conversation to figure out. And this one is no exception. It sounds almost too simple to be true, but if you have ever shown up for someone else on a day when you were not feeling your best, you probably already know exactly what he meant. Why Helping Others Helps You There is something quietly powerful that happens when we shift our focus from our own struggles to someone else’s. It does not erase our problems, but it gives us a temporary reprieve from them, and sometimes that is exactly what we need to gain a little perspective. When we are going through a hard season, it is easy to turn inward. Our pain becomes our whole world. Every thought circles back to what we are dealing with, and the weight of it can feel suffocating. But the moment we reach out to someone else, something shifts. We step outside of our own stor...

The Joy Series: Finding Joy in Relationships - The People Who Water Your Garden

Image
The Joy Series: Finding Joy in Relationships - The People Who Water Your Garden Post 5 of the Joy Series   I want to start this post with a woman you have never met. Her name was Dorothy. But to me, she was Mom. She was one of the most giving, loving, and quietly joyful people I have ever known. She volunteered for my brother's school and for the Special Olympics. She collected money for the American Heart Association. She was always the first to show up when a neighbor was in need. She loved deeply and without condition and without judgment. And she did all of this while living in a home where her own joy was being quietly diminished. My father was not kind to her. He stifled who she was and who she could have become. He did not honor her the way she deserved to be honored. And yet her joy shone through. Not loudly. Not dramatically. But steadily, like a candle that refuses to go out no matter how strong the wind. I did not understand until very recently, sitting with my ow...

Inspirational Quote: Finding Beauty in the Pain A Quote by Viktor Fankl

Image
"When We Are No Longer Able to Change a Situation, We Are Challenged to Change Ourselves." Viktor Frankl, Man's Search for Meaning There is a moment most of us know well. The moment when you realize the situation in front of you is not going to change. The job is gone. The relationship is over. The diagnosis is real. The door is closed. And in that moment, a quiet but powerful question surfaces: Now what? Viktor Frankl lived inside that question in the most extreme way imaginable. A psychiatrist by training, Frankl survived the Nazi concentration camps of World War II, including Auschwitz. He lost nearly everything and everyone he loved. He had no control over what happened to him. But he discovered something inside those walls that changed the way he understood human life forever. He still had a choice. The Freedom No One Can Take From You Frankl noticed something remarkable while observing his fellow prisoners. Some people, despite unbearable suffering, managed to hol...

Solo Dating The Art of Taking Yourself Out (And Loving Every Minute of It)

Image
Solo Dating The Art of Taking Yourself Out (And Loving Every Minute of It) Let me ask you something. When did you last do something just for you? Not for your kids, not for work, not because someone invited you. Just because you wanted to. If you had to think about that for more than a few seconds, this post is for you. Since my divorce, I have had to relearn something that nobody really teaches us: how to enjoy my own company. And I want to be honest with you, it felt awkward at first. Going to dinner alone was one thing (and yes, I have written about that too, check out my post on solo dining if you missed it). But the idea of going to a concert, a museum, or even a movie by myself felt like announcing to the world that I had no one to go with. Spoiler alert: that feeling fades. And what replaces it is something pretty wonderful. First, Let's Change the Way We Think About This Going out alone does not mean you are lonely. It means you are living. There is a real difference be...

The Joy Series: How to Reclaim Your Joy - The Battle Worth Fighting

Image
The Joy Series: How to Reclaim Your Joy –  The Battle Worth Fighting Post 4 of the Joy Series We have been on quite a journey together. In Post 1, I told you my story. The day my husband of 37 years walked out and joy disappeared completely. The decade-long fight to find it again. The garden and the fog and the small, stubborn flicker that refused to go out. In Post 2, we explored what joy actually is. Not an emotion like happiness, but something deeper. A part of your being. The garden, not just the flower. In Post 3, we traveled the world and discovered that the cultures with the deepest relationship with joy are the ones that root it in something constant. Nature. Community. Simplicity. Presence. And now we are here. Post 4. The one I have been building toward from the very beginning. This is the practical roadmap. This is what I actually did, step by painful step, to reclaim my joy. And this is my promise to you: if I could do it, after everything I lost and everything I...
