Recipe Review These Pancakes are Amazing "Vanilla Cinnamon Buttermilk Pancakes"

Vanilla Cinnamon Buttermilk Pancakes
There is nothing like pancakes for breakfast.  I remember when I lived at home my mom would make pancakes every Sunday.  I have a brother with Down's Syndrome, and if mom forgot it was Sunday Pancake Day, he would quickly remind her.
I don't remember what base she used for her pancakes; I believe it may have been Bisquick.  The end product was always delicious.  Of course, we piled on lots of butter and syrup on each pancake so good was the only option.
I came across this recipe for Vanilla Cinnamon Buttermilk Pancakes on Pinterest.  The original post was on a blog called The Chunky Chef.  I decided to give them a try.

I gathered my ingredients...
INGREDIENTS
2 cups all-purpose flour 
3 Tbsp white sugar

1 1/2 tsp baking powder 

1 tsp baking soda
1/4 tsp salt

2 cups buttermilk

1 1/2 tsp vanilla extract

1/2 tsp ground cinnamon 
1 egg

1/4 cup melted butter

INSTRUCTIONS
  1. Melt the butter and set aside to cool down slightly.
  2. To a mixing bowl, add the flour, sugar, baking powder, baking soda, and salt. Use a whisk to combine all dry ingredients well.
  3. In a separate bowl, combine buttermilk, vanilla, ground cinnamon and egg. Whisk to combine. Add melted butter and whisk again.
  4. Slowly pour the wet ingredients into the dry ingredients, whisking and stirring to mix it all together. Once it's combined, stop mixing. If you over-mix, your pancakes won't be light and fluffy.
  5. Set pancake batter aside and heat up a large skillet or griddle over MED-LOW heat. Add a bit of butter to the preheated griddle and spread it out.
  6. Use a 1/4 or 1/3 cup measuring cup to scoop the pancake batter onto the griddle or skillet. Slowly pour it onto the surface, circling outwards to make a nice circle.
  7. Let the pancake cook about 2-3 minutes. You'll notice bubbles popping up on the surface of the pancake, if the edges look set, carefully flip the pancake over. Cook another 2 minutes on the other side.
  8. Remove to a plate and cover with a kitchen towel. Alternatively, you can place the pancakes on a baking sheet and keep it in a low heat oven (175-200 degrees), until you're ready to serve.

    I melted my butter and set it aside
    I mixed the first 5 ingredients in the list,
    In another bowl I whisked together the buttermilk, vanilla, cinnamon and egg.
    (I always beat my egg up just a little before I add it other ingredients)
    Then I added the melted butter and whisked again.

    Then as in the recipe above, I whisked the wet and dry ingredients together.  It seemed a bit thick, but I believe that is the way it is supposed to be.  I did add just a touch more buttermilk I could not help myself.
    Then cook as directed.
    I have made this recipe twice this week.  The first time as a surprise for my grandkids.  The first time I did not add the cinnamon, I was worried the kiddos would not like that added flavor.
    They came over on Sunday and wanted pancakes, so I decided to add the cinnamon, and they seemed to love it and so did I.

    As you can see, Caleb's dinosaur liked them too!

    Sunday Morning Pancakes what could be better?

    I would give this recipe a 10/10 on my cooking scale.  
    I will definitely make them again.
