Recipe Review Trisha Yearwood's Beef Stir-Fry from Food Network Magazine

Happy Day it is Recipe Review Time!
I had just received my new Food Network Magazine and I couldn't wait to try a new recipe. I selected my recipe and gathered my ingredients. I decided to go with.....

Trisha Yearwood's Beef Stir-Fry  1 1/2 pounds skirt steak, cut into 4-inch-long pieces, then cut against the grain into 1/4-inch-thick slices
Salt and freshly ground pepper
1/4 cup low-sodium soy sauce
1 serrano chile pepper, seeded and finely chopped
2 teaspoons sugar
2 tablespoons freshly squeezed lime juice (1 to 2 limes)
2 tablespoons olive oil
2 cloves garlic, grated
1 bunch scallions, thinly sliced
6 ounces fresh mushrooms, sliced
1/4 pound snow peas or green beans
1 12 -ounce can baby corn, drained
1 red bell pepper, thinly sliced (optional)

Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.

Winterfest 2016. The Polar Plunge

Every year at the end of January Blowing Rock NC hosts Winterfest.
Just a few of the events are the Chili Cookoff, WinterFeast, Wine Tastings, Ice Carvings and more...

From the Chili Cookoff to WinterPaws Pet Show,  the icy Polar Plunge to WinterFeast, there’s something for all ages at Blowing Rock WinterFest. One of the many highlights of Winterfest is the Polar Plunge.  It is held at the Chetola Resort.  Here are a few of my photos from the event...You will notice a few folks holding plungers, hence the Polar "Plunge":-)

....If you find yourself in the Blowing Rock area I highly suggest you visit Moses Cone Park....
"Moses Cone Park at Milepost 294 near Blowing Rock, North Carolina, is a popular destination in its own right, and the 25 miles of carriage roads on the former estate  offer plenty of opportunities for a hike." Moses Cone Park...Bass Lake  It was cold and windy on the Friday Erica and I were in Blowing Rock.  We decided to take an easy hike on a trail that swings around Bass Lake.  It was cold but beautiful.  You had to be careful, because it was a sheet of ice there on the path.
You can see there on the top of the hill the Moses Cone Manor.  You can access it from the Blue Ridge Parkway or walk up the carriage trails to get to it.  We have been many times.  It's a beautiful view from the top.   "Moses H. Chetola Resort....The Fire Pit

Chetola Resort Site One of our favorite spots at the Chetola Resort in Blowing Rock NC was the Fire Pit.  If you go you will find this delightful location just outside the Timberlake's Restaurant. Be sure and secure a drink  from the bar before you venture out. "At the turn of the 20th century, it was known for its natural beauty and therapeutic qualities. It is fitting that in Cherokee, Chetola means "Haven of Rest." Today it spans 87 magnificent acres in the heart of the Blue Ridge Mountains and has come to be known as a world-class resort."
