Recipe Review...Pork Loin with Apricot Rosemary Glaze from Betty Crocker

...I found this recipe in an old Betty Crocker Magazine.  It looked good so I decided to give it a go....


















I studied the recipe and gathered my ingredients...


3-lb pork loin roast
1
teaspoon salt
1/4
teaspoon pepper
1
cup apricot preserves
1/4
cup dry sherry, cooking sherry or apple juice       (I used apple juice)
2
teaspoons dried rosemary leaves, crumbled
2
cloves garlic, finely chopped (I never use fresh garlic because I am a garlic wimp....I used garlic powder and very little ) 
  1. Heat oven to 350°F. Trim fat from pork. Place pork in 13x9-inch glass baking dish. Sprinkle with salt and pepper.
  2. In 10-inch skillet, heat preserves, sherry, rosemary and garlic over medium heat, stirring frequently, until thickened. If necessary, mash apricot pieces with fork into small pieces. Spoon 1/4 cup apricot mixture onto pork (reserve remaining apricot mixture). Insert meat thermometer so tip is in center of thickest part of pork.
  3. Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes or until thermometer reads 155°F. Cover pork with foil; let stand 15 to 20 minutes or until thermometer reads 160°F. (Temperature will continue to rise about 5°F, and pork will be easier to carve.) Cut pork into slices. Heat remaining apricot mixture; serve with pork. (I cooked mine for 1hour and 30 minutes)
Makes 10 servings

























It was a very good recipe.  I would give it an 8.5/10 on my cooking scale.  Next time I will make more of the glaze.  I felt like I needed more on the pork loin.

Monday Morning Motivation

One of my favorite songs that we used to sing in church is Shout to the Lord by Darlene Zschech.  I love the lyrics so for Monday Morning Motivation I thought I would share them with you.

Restaurant Review...Scratch Bakery, Durham NC

Josh, Steph, Caleb, and I decided to check out Scratch Bakery in downtown Durham.  I had been hearing good things and also have seen positive write-ups in several magazines.  Now it was time to see for ourselves.....So off we went....We parked and made our way to the bakery.

We really enjoyed our visit to Scratch. I loved the coffee and my donut muffin.  You could tell that everything was made from fresh ingredients.  Can't wait to visit again, hopefully soon...

Monday Morning Motivation

Yesterday at church I heard a sermon on encouragement.  Our new pastor Jenny Wilson, spoke to us from the heart.  What a blessing. What I took from the sermon was that encouragement flows out of love, it must be based on truth and should be given away....I believe we all need it....daily.  I will try to give some away at the clinic today:-)
I was thinking....what encourages me?
The beauty of creation....































My family...














Encouragement for me also comes from...the words of Jesus, the words of encouragement from others, and also things as simple as a hug, a smile, a 
"like" or comment on face book, comments from my blog followers, a phone call,an invitation.  All very simple but can be life changing.
I will leave you with an encouraging quote....

Colonial Williamsburg, Final Memories of a Great Trip:-)


Just a few last images of our wonderful trip to Old Williamsburg VA.  




This place is suppose to be haunted with over 20 ghosts.  Sadly we did not see any.








































It was great to spend some time in such a beautiful place so full of history and fun with my two wonderful daughters.....I can't wait till our next trip.  Love you Stephanie and Erica!!!!
