My Sunday Song "Be Still and Know" by Steven Curtis Chapman.

A couple of weeks ago my new friend Linda spoke on Laity Sunday.  Her sermon was titled "What's prayer got to do with everyday life?"  A few of the statements I took from her talk were "Can we maintain our joy even in the difficult times?"  "You will grieve and mourn but it will turn to joy."  Then she went and did it, she quoted the verse that I have to hold onto daily "Be Still and Know that I am God"  It was hard to maintain my composure after it is now.  So what does prayer have to do with it?  It as Linda said connects us to the source of our power.  It helps us in the good and difficult times in our lives.   In my mind it connects us to our Father to our Dad.  I knew there must be a song that would go along with this verse.  I found Be Still and Know by Steven Curtis Chapman.  Love it!  I made a little video with the pictures I took in the mountains. God Bless and Happy Sunday Everyone:-)

Recipe Review..."My Favorite Coffee Cake"...from Mixing Bowl Magazine

I love to try new recipes.  Josh, Steph, and Erica were coming to visit this past weekend so I decided to try something new that hopefully everyone would like.  When I saw the picture of "My Favorite Coffee Cake" in The Mixing Bowl Magazine I thought that might be just the thing.  I gathered my ingredients....

As you can see in the picture my glaze did not look nearly as nice as the picture in the magazine.  I followed the recipe exactly.  It tasted really good though. This has happened to me before with these glazes.  I will have to figure out what I am doing wrong:-(
The first slice....
It was wonderful.  Flavorful and moist.  Erica gave it a 10/10 on the cooking scale.  I think I will give it a 9.5/10 on my scale only because it was not as pretty as the picture.  I will make this again.  It is a great cake to serve when company comes.

Exploring Kathiey's Local World. The North Carolina State Fair 2010

This past weekend we went to the NC State Fair.  Josh, Steph and Erica came in for the event.  One of the first things that you think about when you think of the fair is the food.  It may not be healthy but it is unique.  The week before we attended I heard talk of the food discoveries folks had made on their fair visit.   The talk of the week was the Krispy Kreme Donut Burger.  Sounds awful.  Kinda like  dinner and dessert combined.
Here is a picture of the famous burger I found on line....
Donuts surrounding my burger just does not appeal to me.  I was willing to give it a try. We did not find the burger on our visit.  To be honest we did not try very hard to seek it out.  I did hear from patients and co-workers that it was pretty good.  The men seemed to like it much more then the women, that tells you something about good taste:-)
The next thing that everyone was raving about were the pickles soaked in Kool Aid.
We did not come across this on our Fair Day either.  I don't know …

Recipe Review..."Apple Butter Cupcakes".....from a cooking magazine?

I decided to re-try a recipe I made several years ago...Apple Butter Cupcakes.  I found the recipe in a cooking magazine but I do not remember which one.  I remember them being moist and yummy.  So I gathered my ingredients....

I did forget a very important step.  You are suppose to sprinkle sugar on top of the Cupcakes before you bake them....darn!  They were still good.  Most and yummy.  I would probably give them a 7.5/10 on my cooking scale.

Then I thought, how could I make them better?
Butter of course.  I spread a good amount of sweet creamy butter on my piece.  Now the rating on my cooking scale has become 9/10.  Wow what a little butter can do:-)

Apple Butter Cupcakes Ingredients 1 3/4 cups All purpose flour 1 1/2 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter 1 cup sugar 1 egg 1 cup apple butter 1 teaspoon vanilla 2 tablespoon lemon Juice 1 evaporated milk  5 ounce can Sugar Preparation Preheat oven to 350 F. Exploring Kathiey's Local World....."Yates Mill Park" Raleigh NC

Sunday afternoon 14 of us from the Triangle Photography Club gathered at Yates Mill Park to try to capture some fall leaf color shots. What a nice park.  The main feature is a rustic old mill on a lovely reflective lake.  Lots of people around on this beautiful afternoon.  Many getting wedding and family photos taken by the small dam and waterfall.  There is a nice trail that leads around the lake and back to the visitor center and mill.  Here are a few of my shots..
